VINIFICATION
- Mechanical harvesting
- Total destemming
- Cold pre-fermentation maceration for 3 days at 10°C
- Maceration for 14 days at controlled temperatures of 22° to 26°.
- Low-pressure pneumatic pressing (less than 1 bar)
- Aged 8 to 12 months in concrete tanks
- Bottling in our own cellars
- Bottle ageing, 2 to 3 months before marketing
