40% Syrah – 40% Grenache – 20% Carignan

10 to 45 years old

45 hl/ha on average – maximum authorized by AOC: 52hl/ha

VINIFICATION

  • Mechanical harvesting
  • Total destemming
  • Cold pre-fermentation maceration for 3 days at 10°C
  • Maceration for 14 days at controlled temperatures of 22° to 26°.
  • Low-pressure pneumatic pressing (less than 1 bar)
  • Aged 8 to 12 months in concrete tanks
  • Bottling in our own cellars
  • Bottle ageing, 2 to 3 months before marketing
