Vieilles Vignes Les Secrets de la Licorne Vacqueyras Red

The manor house has a long history, dating back to the Middle Ages, but Napoleon III also resided in our current home. However, it was our grandfather, Rémy Carichon, who spotted the excellent terroir for the wine and decided to plant the first vines.
The name of this wine refers to the lord Pellegrin de Brunellis, who fought for the Pope in Avignon when his authority was threatened in the Middle Ages. The Pope gave him a coat of arms bearing the Unicorn, as well as ownership of the estate. This wine is the emblematic wine of the estate.

VARIETIES
80% Grenache – 20% Mourvèdre

VINE AGE
15 to 45 years old

AGEING
Can be enjoyed young to enjoy the fruit aromas, but can also be cellared for 10-12 years, during which time the aging aromas will develop.

VINIFICATION

Old vines aged between 50 and 80 years from the Garrigue plateau, a specific terroir that produces highly concentrated wines.
Good grape maturity gives this cuvée more intense aromas.
The grapes are hand-sorted and completely destemmed, and only the best is kept. The must ferments at low temperature for 20 to 30 days, with several pump-overs to promote skin-juice contact and maximum aroma development.
The wine is partially aged in oak barrels and concrete vats for 12 to 18 months, and filtered before bottling.

TASTING

Dense ruby with garnet highlights. Intense nose of fine spices, with a fruity touch of red cherries. Beautiful richness on the palate, with a sweetness that adds charm, a fairly dense body, tight tannins and a long, persistent finish.

Food pairing: large game, red meat, barbecue, sirloin steak.
